LIGHTBULB MOMENT 💡 it was like something clicked in my head about a week ago.
For several years now I’ve been self diagnosing my stomach issues, putting it off as a gluten intolerance or dairy intolerance.
Never once did I think my belly problems had to do with any of the so called healthy foods I was eating.
After reading up on lectins in foods, come to realize it’s more than the gluten, it’s also how my body reacts to some veggies and beans.
The last week has been eye opening. I haven’t had any stomach issues or bloating . I am feeling full after meals and not snacking as much in between. Choosing veggies that are compatible with my body has made me feel comfortable after eating and I can’t remember the last time I could say that.
Now that I know what my body can tolerate, it was easy to whip up this quick meal after getting home from kids activities super late.
We were all cranky, hungry and tired. The last thing I wanted to do was prepare a meal but I’m so glad I did!
